Octane is a measure of a petrol’s resistance to “knocking” or “pinking”.  Knocking is due to the fuel/air mixture igniting under compression in another area of the cylinder to that started by the spark plug.  The sound is due to the shock waves created when the two flame fronts collide.  Knock typically occurs during acceleration but can also occur in a high load/high speed situation such has high speed cruising.  Increasing a fuel’s octane rating reduces its tendency to knock and therefore improves acceleration performance and power delivery.
